Let’s talk about ice cream. I love ice cream. I like almost all flavors and all consistencies, but in general I prefer my ice cream rich, full of delicious add-ins like chocolate, caramel, cookies and nuts. In my opinion, ice cream is the perfect dessert, snack, or even breakfast. Really, anything sweet is better with ice cream.
I am in Barbados and the sun in shining, which means I have plans to eat lots of ice cream and cool drinks, and swim as much as I can. I thought I’d share a little of the warm weather cheer with those of you approaching winter with this simple ice cream recipe.
Yesterday I finally had the chance to sample and adapt a simple two-ingredient ice cream recipe. It is definitely on the richer side – as those two ingredients are sweetened condensed milk and whipped cream. But it is luscious. I promise a little goes a long way. To balance all that richness, I will also share with you my favorite light berry cold summer drink so you have both a rich and light option available.
These are great recipes to do with kids, as younger children can participate with adult supervision, and older children can make either simple recipe on their own. When you are making the ice cream, you will only need 1 can of sweetened condensed milk and 2 cups of heavy whipping cream.
But you should think about your add ins! Yesterday I made mint chocolate chip and it is a wonderful balance of creamy and minty with lots of chocolate chips. I used 9 drops of mint essential oil for the mint flavor, but if I’d had some fresh mint leaves I would have blended them with the cream for a nice light green color in addition.
Simple, Rich, Five Minute No Churn Homemade Ice Cream
Here are some flavor options I think would be delicious:
You get the idea on the fruit flavors…And more flavors:
- Mango with macadamia nuts and white chocolate chips would also be amazing
- Butter pecan (add vanilla and caramelized pecans, see notes below)
- Mint Chocolate Chip
- Chocolate and nuts
- Chocolate with white chocolate chips (and nuts!)
- Crumbled up Oreo type cookies (ala cookies and cream)
- Crumbled speculoos cookies or graham crackers with cinnamon and possibly caramel
- Blending either hazelnuts or pistachios with the cream for hazelnut or pistachio ice cream
- Blending in peanut butter and adding chocolate chips
The possibilities are really endless. Think of creative additions like: gummy bears, chocolate covered nuts or raisins, trail mix, chopped up peanut butter cups, M&M type hard candies, or yogurt covered pretzels.
Now that you’re dreaming about all the possibilities, here is the recipe:
Two Ingredient, Endless Possibilities, No Churn Ice Cream
1 Can of Sweetened Condensed Milk (14 oz or about 397 grams)
2 cups (about 240 grams) of heavy whipping cream (un-whipped)
Step 1: Pour the sweetened condensed milk into a bowl and mix any flavors you want. This can include vanilla, toffee, caramel, mint, etc.
Step 2: Whip the cream. If you are using fruit, nuts, or peanut butter than you want blended into the base of the ice cream (rather than just chunks) you should add them now as you begin blending the cream
Step 3: Carefully begin folding the whipped cream into the sweetened condensed milk
Step 4: Add any additions you want, such as chocolate chips, nuts, etc.
Step 5: Place in freezer safe container and freeze for at least 3 hours. When hard, remove and enjoy!
And for those who prefer a lighter option, this berry drink is delicious year-round. It is like sorbet in drink form. It is light and refreshing, and I always feel energized after drinking it.
Healthy Cold Berry Drink
2 cups of frozen fruit – I prefer berries, but mango or other fruit would also work
1 teaspoon of vanilla extract
1 splash of rose water (optional, but delicious)
4 cups of water
Stevia or sweetener to taste
To Prepare: Blend the berries with the other ingredients on high, until it forms a smooth, frothy drink. I usually use about 1/8 of a teaspoon of pure stevia extract to sweeten, but you can use whichever sweetener you prefer.
You could also combine the two recipes. A scoop of the ice cream would be delicious in the berry drink, sort of like a root beer float but with totally different flavors.
